When many people think barbeque they think of
burgers and steaks, nothing too fancy. However, more
and more people are enjoying the vast and exciting
foods that you can grill up on your home barbeque in
no time. Creating beautiful gourmet meals that are
bursting with flavor can be a snap with a few simple
tips.

In years gone by, we tended to think only of the main
course as being fit for the barbecue. But what about all
those side dishes with potential? Instead of the typical
potato or green salad, how about cooking some veggies on
the barbeque grill as well. The secret to these sides is
preparing a great marinade. Some of the best for vegetables
contain sweet and sour flavors, sesame oil, or even a
honey-mustard glaze.

Another great way to do veggies is a tinfoil pack on the
barbeque. Start by cutting up some of you favorite
vegetables such as red onions, peppers, potatoes, and
mushrooms. Place these on top of a large sheet of
tinfoil and place several pats of butter throughout. Add
some minced garlic and some salt and pepper. Wrap up
the foil to make a tight package and throw on the
barbeque for about 20 minutes. When you~re ready to
serve it place contents into a bowl and voila, you~ve got
a delightful, hot and tasty veggie dish.

Vegetarians often feel left out of the backyard barbeque
culture. However, there are some truly delectable
vegetarian dishes that even the most devout meat lover
will enjoy. Grilled portabella mushrooms are divine
when marinated in balsamic vinegar and olive oil. Grill
these beauties for several minutes and serve just like a
burger on a bun. Add some garlic or watercress mayo
and you~ve got an instant vegetarian gourmet hit.

Fish is a dish that cooks up to perfection on a barbeque.
Keep in mind that fish fillets will usually break apart on
a barbeque so unless you~re an expert stick with steaks
such as salmon and halibut. A great marinade for fish
steaks is a sweet soy dressing. Combine olive or
sesame oil with soy sauce and brown sugar over a
medium heat. Once the sugar has dissolved let your
fish steaks (great for halibut) soak up the flavor for
about 20 minutes and continue to baste while you~re
grilling.

Being a backyard barbeque gourmet just takes a little
creativity and a willingness to step out of the ordinary.
You can cook on your barbeque all year round, not just
in the summer months. There is a huge variety of great
cookbooks available that not only give you delicious
main dish ideas, but sides, marinades, and dressings as
well.
